Bordeaux is composed of Merlot and Cabernet which stand for 90% of Bordeaux region total production. They tend towards flavors of wild fruits as Black currants and cedar within a touch of earth and leather. Focus on complexity though changing weather.
Wineries as Chateau Rothschild, Margaux, La tour, Petrus and more will tend to be paired with Wild meat as lamb, red meat, stews as well as cheese.
